Adri´s vegetarian lasagna

This recipe may be vegetarian but it is packed with everything your body needs to feel truly nourished! The vegetables contain vitamins, antioxidants, phytonutrients & fibre! And the hummus, pine nuts & tahini are a great source of protein and healthy fat making it a super duper delicious and nutritious meal! Thank you for sharing Adri!

2 servings

Ingredients

2 zucchinis sliced lengthwise

3 sliced tomatoes

A small cauliflower

Kalamata olive tapenade

Hummus (see recipe to make your own in snacks!)

Tahini

Pine nuts

Olive oil

Thyme

Curry powder

Sea salt 

Directions

Put the oven on at 200 degrees Celsius or 400 degrees Fahrenheit 

Roast the zucchini with olive oil & salt

In a separate tray, roast the cauliflower with olive oil, salt & curry powder (if you like your cauliflower soft, then blanch it a couple of minutes before roasting!)

When the zucchinis are nearly done, insert the tomatoes, olive oil, salt & thyme into the oven in a separate tray

When everything is cooked layer the zucchini, tomato, tapenade, hummus and pine nuts twice. Drizzle the tahini on top and serve the cauliflower on the side.
