Banana & blueberry overnight oats

This is a super practical & healthy breakfast you can prepare at night and bring to the office the next day or eat at home if you are short on time. Filling, nutritious & absolutely delicious too! They last for two days in the fridge!


Oats are among the healthiest grains on earth. They´re naturally gluten free,  a great source of vitamins, minerals & antioxidants and they contain a specific type of fiber known as beta-glucan.


Studies show that consuming 3 grams of soluble oat fiber per day typically lowers total cholesterol by 8-23%. Oats have a low glycemic index which means that the energy is released slowly into the bloodstream making you feel fuller for longer.


Berries are a great source of antioxidants and are low in sugar. Bananas are a great natural sweetener anda good source of potassium. The nut butter provides a good source of healthy fats to help absorb the nutrients and also helps keep you feel fuller for longer.

Ingredients

½ cup rolled oats

½ cup mashed banana

2 tablespoons of chia seeds

1 teaspoon of vanilla extract

¼ teaspoon of cinnamon

¾ cup of almond milk

½ cup of blueberries or mixed berries (frozen is fine)

Toppings (optional):

Almond or peanut butter (check the label for no added ingredients besides the nuts)

Sunflower seeds

Hemp seeds

Dried cranberries

Dried coconut flakes

Almonds, cashew or brazil nuts

Directions

  1. In a small bowl mix together the mashed banana, the chia seeds, the oats, vanilla extract, cinnamon & almond milk
  2. Split the oats into two jars and cover overnight
  3. Top with some sliced banana, berries, nut butter and any other topping of your choice.
