This is a super easy but delicious and healthy twist on the traditional hummus!
1 cooked beetroot (I buy them cooked as it´s easier!)
2 small cups of chickpeas, rinsed and drained
Zest of 1 large lemon
Juice of half a large lemon
A good pinch of salt & pepper
2 tablespoons of Tahini
1/4 cup of olive oil
2 cloves of garlic (optional!)
Place the beetroot into the blender and blend until smooth
Add remaining ingredients except for the olive oil and blend until smooth
Drizzle in the olive oil at the end
Taste and adjust with anything you deem necessary. Add some water if it´s too thick!
Store in an airtight container in the refrigerator for up to a week!
