Chickpea, tomato & feta salad

Chickpeas are a great source of protein, fibre & folate. They can help control blood sugar, increase satiety and improve digestion thanks to their high fiber content! This salad is great as a side dish to some chicken or fish or as a light lunch! You can throw in some tuna & avocado to make it more filling!


1 small red onion

1 tin of chickpeas (400g or14 oz)

100 grams of feta cheese

2 big juicy tomatoes

1 tablespoon of white wine vinegar

a pinch of pepper


  1. Peel and finely chop the red onion
  2. Chop the tomatoes
  3. Rinse and drain the chickpeas
  4. Cut the feta in small pieces
  5. Mix all ingredients together & enjoy!
