Flax & banana pancakes

Flaxseeds are high in fiber & omega 3 fatty acids and are commonly used to improve digestive health. Flaxseeds may also help lower bad cholesterol (LDL). You can buy flaxseeds in health food stores. This recipe requires ground flaxseeds that are actually easier to digest than the whole form.

2 servings


1 very ripe mashed banana

2 eggs, beaten

2 tablespoons of ground flaxseeds 

1/4 teaspoon of pure vanilla extract (optional)

2 tablespoons of coconut oil

Maple syrup (optional)

Berries (optional)


Mix the banana & eggs together in a bowl until smooth. Add ground flax seeds and vanilla extract and mix well. 

Heat coconut oil in a small pan over medium-low heat. Scoop batter, about 1/4 cup per pancake, and cook until the centre starts to bubble. Flip pancakes and cook until bottoms are lightly browned. 

Top with maple syrup and some extra bananas or berries!
