Green chicken/chickpea curry soup!

This is made up of less than 10 ingredients and takes less than 10 minutes to prepare. I love this when it´s cold outside or if I feel a little under the weather as it warms me up from the inside! Feel free to bring your own twist to this recipe! Add the vegetables you love & replace the chicken with chickpeas if you want to make it vegan!

Ingredients

1 leek

1 red pepper 

1/2 eggplant

a small jar of green peas 

2 small chicken fillets 

1 tablespoon of coconut oil 

2 tablespoons of green curry paste 

1 can of coconut milk for cooking

1 cube of organic vegetable stock 

3 cups of water


Directions

Chop all the vegetables and throw them in a pan with the coconut oil. Stir fry until they soften. Chop the chicken and add it to the vegetables. Stir fry until the chicken is cooked on the outside. Add the curry paste and the coconut milk and stir for 2-3 minutes until everything is mixed. Add in the stock and the water and let it all simmer for 10 minutes. 



Notes

You can replace the green peas with chickpeas if you prefer the taste or if you want a higher protein content! Choose organic vegetables and organic free range chicken if possible! Depending on the curry paste (and your taste buds!) you may need more or less paste! I like mine spicy! If you want to make it healthier, make your own stock & you will be my hero! :)
