These are badass! Because ripe bananas are already sweet, you won´t need any added sweetener to these babies! Their protein content is higher than the average pancake and they only contain healthy fat (peanut & coconut). They´re a bit tricky to fry but they are totally worth the effort! I don´t think you´ll need anything to top them as they are amazing as they are but some red berries are a great addition for some extra vitamins & antioxidants!
10-12 small pancakes
3 small ripe bananas
1/2 cup of peanut butter (check the label that there´s no added sugar!)
4 large eggs, lightly whisked
3/4 tsp baking soda
1 tsp vanilla extract
1/2 teaspoon of cinnamon
1/2 cup of dark chocolate (70% cacao minimum)
A dash of sea salt
Coconut oil for cooking
Place the bananas in a medium bowl and mash them with a fork until all the lumps are gone.
Add the peanut butter and mash again.
Whisk the eggs in a separate bowl
Incorporate the eggs with the peanut butter/banana batter and add in the baking soda, the vanilla extract & the cinnamon. Whisk it all together into a smooth batter.
Add the chocolate & the sea salt.
Heat the coconut oil in a pan and get flipping!
These pancakes are quite delicate to handle so be gentle! It takes about 3 minutes to get them golden on each side if you cook on medium heat.
