Prep Notes

Chickpeas are a great source of protein, fibre & folate. Sweet potatoes may taste sweeter than normal potatoes but they actually have a lower glycemic index as they are more dense in fiber. They are also a better source of nutrients as they are full of vitamin A, C & fibre!

4 servings

1 cup mashed sweet potato (see how to prepare this below)

1 cup chickpeas

2 garlic cloves, minced

1 small shallot, minced

1 tablespoon of scallion, finely chopped

2 tablespoons of chilli sauce (check the label for no sugar)

¼ teaspoon of cumin

¼ teaspoon turmeric

½ teaspoon paprika

salt & pepper to taste

  1. Place 1 medium sized sweet potato (no need to peel, just wash) in a pot with enough water to cover
  2. Cook approximately 15 – 18 minutes.
  3. Remove the sweet potato and peel the skin
  4. Preheat the oven to 200 degrees Celsius (400 Fahrenheit)
  5. Prepare a baking sheet and brush it with coconut oil
  6. Place all of the ingredients into a food processor and blend until combined. Adjust the texture by either adding coconut oil or hot sauce.
  7. With a large serving spoon, scoop up an amount of the pureed mixture to make a burger (size & thicknessis up to you) Use the back of the spoon to push the puree into the shape of a burger. Repeat until all of the puree has been used.
  8. Bake for 40 minutes total flipping the burgers half way through.
  9. Serve with some guacamole, tomatoes, cheese (vegan if you fancy!) & wrap it all up in a salad leaf.
