Sweet potatoes may taste sweeter than normal potatoes but they actually have a lower glycemic index as they are more dense in fiber. They therefore should keep you fuller for longer and they also have more nutrients than normal potatoes. Red kidney beans are a great source of protein, folate, dietary fibre, potassium, iron & magnesium! And avocados are a great source of healthy fat!
2 tablespoons of Coconut oil
2 sweet potatoes
1 large avocado
juice 1 lime
1 red chilli, de seeded and finely chopped
2 tomatoes, finely chopped
1 small bunch of coriander
1 small red onion, finely chopped
1 15 ounce (400ml) can of kidney beans, drained
1) Heat the oven to 220degrees Celsius (390 Fahrenheit). Oil the sweet potatoes and then roast them for 45 minutes or until tender all the way through when pierced with a knife.
2) Meanwhile mash the avocado with the lime juice in a small bowl, then stir in the chilli,tomatoes, coriander and onion
3) Cut the potatoes in half and top with the beans and guacamole.
