Sweet potato brownies

Sweet potatoes may taste sweeter than normal potatoes but they actually have a lower glycemic index as they are more dense in fibre so you get the sweet taste without the hike in blood sugar levels. 

Sweet potatoes and other sweet root vegetables help curb sugar cravings and can help regulate blood pressure thanks to their high content in potassium. All in all they are a much better source of nutrients than normal potatoes as they contain high amounts of Vitamin C which helps accelerate wound healing & produces collagen which helps maintain the skin´s youthful elasticity. They also contain Beta Carotene which is a powerful antioxidant that strengthens our eye sight and boosts our immune system. 

Finally, sweet potatoes contain a good amount of magnesium which is the relaxation & anti-stress mineral that helps keep our arteries, our hearts, nerve function and muscle tissue healthy. 80% of the population the United States is estimated to be deficient in this important mineral. This & all the reasons above make sweet potatoes a great choice at any meal!


1 cup mashed sweet potato

½ cup of creamy almond butter

1 tablespoon of maple syrup

3 tablespoons of raw organic cacao powder

1 teaspoon baking soda

½ teaspoon vanilla extract

2 tablespoons of dark chocolate chips

1 tablespoon of coconut sugar

coconut oil to brush

a pinch of salt


  1. Preheat the oven to 180 degrees Celsius (350 Fahrenheit)
  2. Prepare a baking sheet or tray and brush with coconut oil
  3. Mix the sweet potato, the almond butter and the maple syrup together then add the cacao powder, the baking soda, vanilla powder & coconut sugar. Add the chocolate chips in last and mix until the batter is even.
  4. Pour the batter onto the baking sheet or into a baking tray and spread some chocolate chips on top to give a more attractive looking brownie.
  5. Bake for 30-35 minutes until cooked through.
  6. Let it cool down before cutting into brownies.


These taste amazing on their own but if you fancy adding something, I suggest pouring over some coconut cream or some coconut sorbet! Tastes badass!
